Combine the ground meat with the onion, parsley, garlic, spices, and baking soda. Knead with your hands for 5 minutes. Cover and leave for 15 minutes.
Shape the meat onto wooden skewers as long fingers, or roll it into a baking tray.
Preheat the oven to 200°C. Arrange the kebab in a baking tray. Distribute the tomato and pepper around it. Drizzle with the olive oil.
