Lentils with lemon (tangy lentil soup)
Lemon lentil soup is one of the classic Levantine dishes.
The lemon gives it a distinctive tangy flavour. At Ramadan suhoor it makes a light, refreshing opener.
In a pot, heat the oil and sauté the onion for 5 minutes. Add the garlic.
Add the lentils, the cumin and the turmeric, and stir for two minutes.
Add the broth and leave it for 25 minutes until the lentils are tender.
Blend half the soup. Add the lemon juice and the salt.
Ladle into bowls and garnish with the parsley and a few drops of olive oil.
