The Story Behind This Recipe

Biryani is a dish of Indian origin that was adopted by Gulf kitchens and became a main Ramadan dish.

Many home cooks replace the meat with mushroom to prepare a vegetarian version rich in flavors and whole spices.

Preparation Steps

  1. Prepare the spiced water

Place the water in a pot on the heat and add the cardamom pods, cloves, cinnamon stick, and salt; let it come to a boil.

  2. Parboil the rice

Add the rice and boil on high heat without covering the pot until the grains are about half to three-quarters cooked.

  3. Drain the rice

Drain the rice and set it aside.

  4. Toast the whole spices

Prepare the filling: heat the oil in a pot on low heat, add the cardamom, cloves, and cinnamon, and stir until they toast and release their aroma.

  5. Sauté the onion

Add the onion and sauté until golden, then add the ginger.

  6. Add the tomato and carrot

Add the chopped tomato and carrot and stir.

  7. Add the fresh herbs

Add the mint and chopped cilantro and stir the mixture until combined.

  8. Add the mushroom and spices

Add the sliced mushroom and mix, then add the masala spice blend, cumin, and dried cilantro and mix well over the heat.

  9. Season the filling

Season with salt, add the water and yogurt, and mix the mixture.

  10. Cover the filling

Cover the pot and leave on low heat for 15 minutes.

  11. Combine rice and filling

Add the boiled and drained rice to the pot, cover with aluminum foil, and leave on low heat for 5 minutes.

  12. Steam cook

Cover the foil with the pot lid and leave on low heat for 25 minutes.

  13. Serve

Turn the pot onto a tray when serving and serve hot alongside a cucumber-yogurt salad.

Blood Sugar Impact

The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.

Glycemic Index

GI
46 Low

A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.

Glycemic Load

GL
28 High

Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.

EEINA Nutrition Tip

Soaking the basmati rice for 30 minutes before cooking improves the grain's texture and speeds up boiling. Covering the pot with aluminum foil under the lid traps the steam and gives the bottom layer of rice a golden crispy crust.

Frequently Asked Questions

Is biryani suitable as a vegetarian dish?
Yes, mushroom biryani is vegetarian if the yogurt is replaced with plant-based yogurt. The recipe itself contains no meat.
What is the difference between masala spices and Indian spices?
Masala is a blend containing turmeric, cilantro, cumin, cinnamon, and hot pepper. Indian spices is a broader mix that varies from one grinder to the next.
Why is the rice parboiled before steaming?
So it finishes cooking with the filling's steam, absorbing the spices' flavor without breaking apart from over-boiling.
