Adeni Wheat and Meat Soup (Shorba Adeniyya)
The Adeni soup is one of the most venerable dishes of the Yemeni city of Aden, and its presence on the Ramadan spread is firmly rooted.
It brings together soaked hard wheat with bone-in meat in a slow cook, and what distinguishes it is its topping of tempered onion fried with cardamom, cinnamon, and cloves, which gives it an unforgettable aroma.
Wash the wheat and soak it for 12 hours with changes of water, because the long soak softens the hard grain and prevents fermentation before cooking.
Fry the chopped onion in the oil until golden, then add the chopped tomatoes, fresh coriander, crushed garlic, cumin, spices, and curry, because this base builds the soup's deep flavor.
Clean the bone-in meat, rub it with a little flour, then rinse it to remove the blood, and add it to the mixture, tossing until it is coated with the flavors.
Add the drained soaked wheat and stir the ingredients well so the spices spread over the grain and meat together.
Pour in the water and cook over medium heat for an hour and a half until the wheat is done and the meat reaches an internal temperature of 71 Celsius and becomes tender on the bone.
Cut an onion into thin slices and fry them with the cardamom, cinnamon, and cloves until browned, then add them to the soup, because this aromatic topping is what sets the Adeni soup apart from others.
Serve it hot with lemon, ghee, and ground cumin, because the acidity and fat balance the heaviness of the wheat and meat.
