The Story Behind This Recipe

Matfaya is an Adeni fish dish from the coast of southern Yemen, in which the fish is marinated with Adeni basbas and lemon, then cooked over a sauce of onion and tomato in a pan until done.

It is served with muaddas rice or Adeni rashoush bread.

Preparation Steps

  1. Soaking the fish

Clean the fish fillets and soak them in water with salt and vinegar for ten minutes, then drain them, because this soak cleans the fish and reduces its sea odor.

  2. Marinating the fish

Marinate the fish with the Adeni basbas, crushed garlic, lemon juice, and half of the cumin and coriander, and leave it for half an hour, because a sufficient marinade lets the fish absorb the flavor before cooking.

  3. Sauteing the onion and pepper

Heat the oil over medium heat and saute the onion and green pepper until they soften and turn golden, because sauteing builds the base of the sauce and softens the pepper.

  4. Making the sauce

Add the grated tomato, tomato paste, the rest of the cumin and coriander, and the water, and cook for about ten minutes until the sauce thickens, because cooking the tomato removes its raw acidity and concentrates the flavor.

  5. Cooking the fish

Place the fish fillets in the pan on top of the sauce and cover them with the liquid, and cook covered over low heat for about twenty minutes until the fish is cooked and its interior reaches 63 Celsius (145 Fahrenheit), because slow covered cooking cooks the fish evenly and keeps it tender.

  6. Garnishing and serving

Scatter the chopped fresh coriander over the dish and serve it hot with rice or rashoush bread, because the fresh coriander adds a refreshing aroma that balances the sharpness of the basbas.

Blood Sugar Impact

The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.

Glycemic Index

GI
11 Low

A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.

Glycemic Load

GL
2 Low

Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.

Troubleshooting

The most common problems when preparing Adeni Fish Stew (Matfaya), and how to fix them:

The fish falls apart

Cook it covered over low heat without stirring, and set it on top of the sauce rather than mixing it in.

The sauce is watery

Cook the tomato longer before adding the fish so the water evaporates and it thickens.

The dish is too spicy

Reduce the basbas and green pepper, and add more tomato to soften the heat.

Storage and Make-Ahead

Refrigerator

Keep it in an airtight container for up to two days, and reheat it gently over low heat.

Freezing

Freeze it for up to a month, and thaw it in the refrigerator before reheating to preserve the fish texture.
