Savory lentil crepes with cilantro and cumin
These crepes belong to an ancient cooking tradition from the Indian subcontinent known as adai and lentil chilla, where lentils are soaked, blended, and cooked on a pan as a thin disc eaten at breakfast.
We chose them for the breakfast table because they offer a savory, filling alternative that relies on plant protein from lentils rather than white flour, and we seasoned them with coriander, cumin, and ginger to suit a Gulf palate familiar with these spices at the table. The result is a warm, easily prepared crepe that works on its own or alongside yogurt or a green salad, and opens the morning with slow, long-lasting energy.
Cover the split red lentils with 600 ml cold water and leave to soak for at least two hours until the grains have swollen and feel soft between your fingers. Soaking eases the blending and gives the crepe a cohesive texture.
Drain the lentils through a fine sieve and leave until all dripping has stopped. Residual soaking water makes the batter too thin and prevents the crepe from setting properly on the pan.
Blend the drained lentils with 120 ml water for two minutes until a smooth, pourable paste forms with the consistency of thick pouring cream. A uniform texture ensures even cooking without lumps.
Transfer the batter to a bowl and add the onion, coriander (cilantro), ginger, green chilli, ground cumin, ground coriander, turmeric, and salt. Stir for one minute to distribute the spices evenly — good stirring spreads the flavour through every crepe.
Heat a non-stick pan over medium heat for two minutes then brush with a little olive oil until the surface shimmers without smoking. Controlled heat prevents sticking and burning.
Pour a ladleful of batter into the centre of the pan and spread it in a circle with the back of the ladle to a diameter of about 15 cm with an even thickness. Even spreading cooks the crepe uniformly.
Cook over medium heat for two to three minutes until the edges are dry, small bubbles appear on the surface, and the base turns golden and holds together. These are the signs that the first side is properly set.
