The vermicelli gives a warm texture that differs from classic yellow lentil soup. The dish is found in middle-class homes daily during Ramadan and is served with toasted bread.
In a pot, heat the olive oil and sauté the onion for five minutes until soft. Add the carrot and continue for three minutes until slightly tender.
Add the cumin and turmeric and stir for thirty seconds until the spices release their aroma. The heat releases their oils and gives the soup its depth.
Add the drained lentils and the broth. Leave the pot over medium heat for 15 minutes until the lentils are fully tender. Remove the pot and blend half of it with a hand blender inside the pot.
Return the pot to the heat and add the broken vermicelli. Let it cook for 5 minutes until tender. Vermicelli cooks quickly, so do not overdo the time.
Remove from the heat and add the salt, pepper, and lemon juice. Serve in bowls topped with the chopped parsley.
