Glycemic Index
GIA low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Chicken cooked in the air fryer with baby potatoes and colorful vegetables, flavored with a barbecue marinade and pomegranate molasses (a thick syrup from cooked pomegranate juice). Light, quick, and crispy on the outside.
The air fryer has reintroduced chicken recipes in a healthy way, so we can get a crispy crust without submerging in oil, and with pomegranate molasses the dish gains a rich flavor.
Parboil the baby potatoes and set them aside in a separate bowl.
Place the balsamic vinegar, barbecue sauce, pomegranate molasses, and chicken marinade in a bowl, then add the Italian herbs, ginger, seven spices, dried coriander, cumin, black pepper, a pinch of salt, vegetable oil, butter, and lemon juice, and whisk the ingredients well with a hand whisk.
Place the colored bell peppers after making a small hole in each with the chicken, and cut the onion and place it with the chicken along with the chopped green onion.
Add the potatoes to the chicken and the rest of the vegetables, pour the marinade mixture over them, and mix well with your hands.
Place the chicken and vegetables in the air fryer at 180 for 12 minutes.
After the chicken is done, drizzle it with a mixture of pomegranate molasses, barbecue sauce, balsamic vinegar, and lemon juice.
The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.
A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.
* Percent Daily Values are based on a 2,000-calorie diet per FDA food-label reference values — your daily needs may be higher or lower. Values are derived from the recipe's ingredients via the USDA database.
The most common problems when preparing Air-Fried Chicken, and how to fix them:
Marinate the chicken well and leave it for 15 minutes before cooking so it absorbs the flavor and moisture.
Store the chicken and vegetables in an airtight container for up to two days, and reheat in the air fryer for 4 minutes.
| Original Ingredient | Tested Substitute | Ratio | Flavor Difference |
|---|---|---|---|
| chicken thighs | chicken breasts | same quantity | Cooking time drops to 8 minutes so the breasts do not dry out. |
Make a small hole in each colored bell pepper before placing it in the fryer, so it does not burst from the steam.
