Preparation Steps

  1. Boil the legumes

    Boil each legume separately according to its cooking time. White beans 25 minutes, chickpeas 30 minutes, lentils 15 minutes. Drain everything and reserve the liquids.

  2. Sauté the onion and carrot

    In a large pot, warm the olive oil and sauté the onion for 5 minutes. Add the carrot and celery and continue for 5 minutes until the vegetables soften.

  3. Add the garlic and spices

    Add the garlic, cumin, and turmeric and stir for 30 seconds. The spices open their oils in the oil and add depth.

  4. Add the legumes and broth

    Add all the boiled legumes, the tomato, and the vegetable broth. Leave the pot for 15 minutes until the flavors blend.

  5. Serve

    Remove from the heat and add the salt and parsley. Serve hot with toasted bread and lemon wedges.
