Muhammar is one of the most time-honored dishes on the Bahraini table, a sweet rice that takes its golden color from date syrup and saffron and is perfumed with rose water, cardamom, and cloves.
We cook it the way it is made in Bahraini homes, parboiling the rice until half cooked, then coating it with ghee, date syrup, and spices, and letting it steam over low heat until cooked and some of it turns crisp. It is traditionally served with fried fish in a beloved sweet-and-savory combination.
Wash the basmati rice well until the water runs clear, then soak it in cold water for about twenty minutes and drain it.
Soak the saffron threads in the rose water and set them aside until their color and aroma bloom.
Boil plenty of water with half the salt, add the rice, and let it boil uncovered for about eight minutes until it is half cooked, then drain it.
Melt half the ghee in the pot over low heat, return the rice to it, then add the date syrup, cardamom, cloves, cinnamon, the saffron rose water, and the remaining salt, and stir gently until the rice is coated.
Poke three holes into the rice with the handle of a wooden spoon to let the steam escape, cover the pot, and leave it over very low heat for about twelve minutes until cooked, then pour the remaining melted ghee over it and serve it with fried fish.
