Avocado, egg, and bacon salad (keto)
A classic keto salad — high in healthy fats, very low in carbs.
The avocado provides monounsaturated fats (good for the heart according to Harvard), the eggs are a complete protein, and the bacon adds flavor and salt. According to Mayo Clinic, the keto diet requires net carbs <20-50 g per day — this salad contributes ~8-12 g.
Boil the eggs 8 minutes (soft creamy yolk) or 10 (fully set). Cool them in ice water for 5 minutes, peel them, and cut them into quarters.
In a dry pan (without oil), grill the bacon 3 minutes per side until it becomes crispy. Turkey bacon is lower in fat than classic pork bacon — available in Saudi markets. Let it cool, then crumble it into pieces.
Cut the avocado in half, remove the pit, peel it. Cut it into slices or cubes. Drizzle it with 5 ml of lemon to prevent oxidation.
In a small bowl, whisk the olive oil, vinegar, mustard, and a little salt and pepper until it becomes an emulsion.
In a large bowl, put the spinach as a base. Distribute the red onion slices.
Arrange the avocado, cut eggs, cherry tomatoes, and crumbled bacon in nice sections over the spinach (do not mix — the arrangement is part of the beauty).
Pour the vinaigrette over the salad in a circular motion. Sprinkle an extra pinch of black pepper.
Serve immediately before the avocado wilts.
