  1. Wash and soak the rice

  5. Steam the rice with the stock and spices

    Return the rice to the pot with the meat, and pour over it about two cups of the stock mixed with the cardamom, cinnamon, cumin, and cloves. Cover it and leave it over very low heat for twenty minutes until the rice absorbs the stock, cooks through, and the grains separate.

  6. Serve

    Turn the rice and meat out onto a wide platter, and scatter the carrots, raisins, and fried almonds over it. Serve hot.
