Sweet potato, egg, feta and spinach bake
A weekly breakfast loaf that trended on TikTok: layers of sweet potato, spinach and feta soaked in whisked eggs and baked as one piece that lasts the week.
We cut it into squares and reheat one each morning. We made our version with gram quantities so it comes out cohesive and easy to slice.
Preheat the oven to 175°C and grease a baking dish with olive oil.
Arrange the thin sweet potato slices in the bottom of the dish to form a cohesive base.
Whisk the eggs with the garlic powder, onion powder, salt and pepper until fully combined.
Distribute the squeezed spinach over the sweet potato, since squeezing it well prevents the bake from turning watery.
Pour the whisked eggs over the layers and scatter the crumbled feta on top.
Bake for 35 to 45 minutes until the eggs set completely and the center doesn't jiggle, since well-cooked eggs are safe per FSIS.
Let the dish rest 5 minutes then cut it into squares to serve.
