The original is from the British blog Don't Go Bacon My Heart, which turned the trending garlic Parmesan chicken skewers into a to-the-minute air fryer method.
Its cleverness is the three-round brushing: two rounds during cooking so the butter caramelizes onto the crust, and one on the hot chicken so it soaks in. We kept the quantities and method exactly as given, by weight — the recipe carries nothing that calls for adaptation, and the blog's name alone is not our concern.
Toss the thigh cubes in a bowl with the olive oil, paprika, garlic powder, onion powder, cayenne, three quarters of the salt, and half the pepper until every piece is coated, then thread them onto four 20 cm wooden skewers packed snugly with no gaps, leaving both ends of each skewer bare for handling. Packing the pieces close preserves the thighs' juices during cooking.
Arrange the skewers in the air fryer basket in a single layer and run it at 200°C for 10 minutes, until the top side browns and the edges begin to darken.
While the skewers cook, beat the softened butter with the Parmesan, minced garlic, parsley, and the remaining salt and pepper using a fork until it becomes a smooth, spreadable cream. The butter must be soft, not melted, so it clings to the chicken instead of running off.
Flip the skewers and brush them with a third of the butter, return them for 2.5 minutes at 200°C, then flip again, brush with another third, and cook a final 2.5 minutes until the edges char, the crust glistens, and the center of the thickest piece reaches 74°C.
Take the skewers out and brush them the moment they emerge with the remaining butter so it melts over the hot chicken and soaks into the crust. Scatter extra Parmesan and parsley over the top if you like, and serve hot.
