GIA low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
A single-serve apple cinnamon mug cake ready in minutes in the microwave — ground oats, grated apple, cinnamon and dates, no added sugar, rich in fibre and protein, a warm snack without turning on the oven.
The mug cake was born from a simple desire for a warm treat without firing up a full oven for one piece.
This version transports the idea to an autumn Arab mood — cinnamon as the companion of warm drinks, and grated apple that melts into the batter leaving it moist and fragrant. We replaced the heavy cake flour and fats with oat flour and olive oil, and the sweetness comes from dates and apple rather than added sugar, making it a single-serve snack ready in minutes that satisfies the craving for something sweet with a genuine cake texture.
Grind the oats in a small food processor until they become fine flour — about 30 seconds. A fine texture gives the cake a cohesive crumb rather than a coarse, grainy one. Choose a wide microwave-safe mug of at least 300 ml so the batter can rise without overflowing.
Grate the apple with its skin on a coarse grater until you have 70 g, then squeeze out the excess moisture in the palm of your hand to remove free water — leaving it makes the centre soggy and undercooked. The skin adds colour and a touch of fibre.
In the mug, combine the oat flour with the cinnamon, baking powder, and a pinch of salt using a fork until evenly distributed. Even distribution of the baking powder prevents bitter alkaline pockets in individual bites.
Add the egg, milk, olive oil, and vanilla and stir with a fork for about one minute until the dry flour disappears completely and the batter is smooth. Stop when it comes together — over-mixing develops the small amount of gluten present and makes the cake rubbery.
Add the squeezed apple and chopped dates and fold in with just a few gentle strokes until incorporated without breaking down. Gentle folding keeps the natural sweetness evenly distributed in every bite.
Cook the mug at 800 W for 1 minute and 40 seconds, until the surface puffs up, feels set when lightly touched, and a toothpick inserted in the centre comes out clean. The decisive sign is a non-sticky surface — even ten seconds of overcooking dries out a mug cake very quickly.
Leave the mug to rest for two minutes before eating. The residual heat finishes cooking the centre and the trapped steam redistributes, giving a soft, cohesive crumb. Dust with a little extra cinnamon and serve warm.
The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.
A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.

The most common problems when preparing Apple Cinnamon Mug Cake for One, and how to fix them:
Over-mixing after adding the liquids developed the gluten. Stir only until the dry flour disappears, then stop — and fold in the apple with just a few strokes.
Either the apple was not squeezed of its moisture, or the mug was too narrow and deep, trapping steam at the base. Squeeze the apple well, use a wider mug, and add ten seconds if needed.
Overcooked. Start at 1 minute 40 seconds and add only ten seconds at a time if needed; then let it rest for two minutes before eating.
The baking powder was not evenly distributed. Mix it with the dry ingredients thoroughly before adding any liquids, and use exactly 1/4 teaspoon — excess leaves bitterness.
The mug was too small. Fill the mug to two-thirds only and use at least a 300 ml mug — the baking powder causes significant rise.
Under-ripe apple or too few dates. Choose a ripe, sweet apple and add an extra date; make sure the cinnamon and vanilla are both present — they are the backbone of the flavour.
Best eaten warm within 15 minutes of cooking — mug cake texture declines as it cools and dries.
Store covered in the fridge for up to two days. Reheat in the microwave for ten seconds to restore softness.
Mix the dry ingredients (oat flour, cinnamon, baking powder, salt) in the mug the night before and cover. In the morning add the wet ingredients and apple and cook. Saves prep time and no mess.
Not recommended — the cooked oats and apple release moisture on thawing and ruin the soft cake texture.
| Original Ingredient | Tested Substitute | Ratio | Flavor Difference |
|---|---|---|---|
| Small egg | 1 tablespoon ground flaxseed mixed with 3 tablespoons water | 1 egg = 1 flax substitute | Leave the flax mixture for 5 minutes to gel. Makes the recipe egg-free but slightly denser in texture. |
| Low-fat milk | Unsweetened plant milk (oat or almond) | equal substitute, 60 ml | Makes it dairy-free. Choose unsweetened to keep control over the sweetness. |
| Chopped dates | 1 teaspoon honey or chopped raisins | 2 dates = 1 teaspoon honey | Add honey with the wet ingredients, not the dry. Sweetness is similar with a slight difference in moisture. |
| Olive oil | Melted butter or coconut oil | equal substitute, 1 teaspoon | Coconut oil adds a gentle fragrance that pairs well with cinnamon. Butter slightly raises the saturated fat. |
| Grated apple | Grated pear or mashed banana | equal substitute, 70 g | Banana shifts the flavour entirely towards sweetness; pear is closer to apple's moist, delicate character. |
| Ingredient | 1 serving | 2 servings | 4 servings |
|---|---|---|---|
| Ground oats | 40 g | 80 g | 160 g |
| Grated apple | 70 g | 140 g | 280 g |
| Low-fat milk | 60 ml | 120 ml | 240 ml |
| Small egg | 1 egg | 2 eggs | 4 eggs |
| Ground cinnamon | 1/2 teaspoon | 1 teaspoon | 2 teaspoons |
| Chopped dates | 2 dates | 4 dates | 8 dates |
Squeeze the moisture out of the grated apple thoroughly before adding it — excess moisture is the most common reason mug cake centres come out soggy and undercooked. Watch the microwave in the final ten seconds, because the difference between a moist cake and a dry one in this format is seconds, not minutes.
