A Saudi-style cold yogurt drink with grated cucumber, mint, and a touch of garlic. Light, hydrating, and suited for Ramadan suhoor.
Aranj is an authentic Saudi drink from the Eastern Province, consumed by people at suhoor and during hot summer days.
It differs from Turkish ayran in that it contains grated cucumber that gives a fresh flavor. In Ramadan it provides moisture and soothes the stomach.
Wash the cucumber and peel it. Grate it finely or cut it into small cubes. Soak the grated cucumber in ice water 10 minutes, then drain.
In the blender, place the buttermilk, grated cucumber, mint, garlic, and salt. Blend 30 seconds only. Avoid over-blending because it increases the foam.
Add the cold water and blend 10 seconds. The consistency should be like liquid ayran, pouring smoothly.
Place the aranj in a bottle and leave it in the refrigerator 15 minutes. Chilling balances the flavors and refreshes the drink.
Pour the aranj into two glasses and garnish with olive oil and mint leaves. Serve cold with ice.
The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.
A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.
* Percent Daily Values are based on a 2,000-calorie diet per FDA food-label reference values — your daily needs may be higher or lower. Values are derived from the recipe's ingredients via the USDA database.
The most common problems when preparing Cold Cucumber Yogurt Cooler, and how to fix them:
Reduce the buttermilk and double the water. The sourness comes from extra buttermilk.
Double the salt and add the garlic. Salt and garlic bring out the flavor.
Stir with a spoon instead of blending. Excess blending adds air.
Remove the cucumber seeds before grating. The seeds are bitter.
Two days in a bottle. Shake before drinking.
The buttermilk separates after freezing.

We choose fresh firm cucumbers with a dark green color. Fresh cucumbers have stronger flavor and more water. We grate them with the peel because the peel contains antioxidants.
