Iraqi Kleicha (Date & Cardamom Cookies)
We make kleicha the way it is made in the homes of Iraq before the holiday, when hands gather around a tray of dough to shape small discs that are baked until the house fills with the aroma of cardamom and dates.
We take care to keep the disc crumbly on the outside and soft in its filling inside, because this contrast is what makes it the holiday sweet everyone waits for.
Mix the flour with the cardamom and salt, then rub the ghee into it with your fingertips until the texture becomes like wet sand, because this is what gives kleicha its distinctive crumbliness.
Dissolve the yeast in the warm milk and pour it in gradually while kneading until you get a soft, non-sticky dough, then cover it and leave it in a warm place for about 30 minutes until it relaxes and becomes easy to roll out.
Heat the date paste with the oil and cardamom over low heat and work it with the back of a spoon until it softens, becomes uniform, and the cardamom releases its aroma, then let it cool a little so it is easier to shape.
Divide the dough into small balls, roll each ball into a thin disc, place a line of dates in the center and roll it into a cylinder, then cut it into finger-thick discs and arrange them on a tray.
Bake at 180 Celsius for about 20 minutes until the tops turn golden and the discs firm up, as the light golden color is the sign of doneness before the dates dry out.
