Bring a pot of water to a boil. Cook the noodles for 4 to 5 minutes according to the package instructions. Drain and rinse under cold water.
In a pan with a drop of oil, fry the tofu cubes over high heat for 4 minutes until golden and crispy.
Add the broccoli, carrot, garlic, and ginger. Toss for 3 minutes — do not let them go completely soft.
