Position the oven rack in the upper third and turn on the top grill. In a bowl, combine one tablespoon of oil with the soy sauce, chilli powder, chipotle, cumin, garlic powder, and onion powder. The chipotle gives the smoky flavour.
Crumble the tofu and add it to the marinade bowl. Toss to coat it in the spices. Crumbled tofu mimics ground meat.
Heat the remaining oil in an oven-safe pan. Add the tofu and spread it in an even layer, then place under the grill until the surface browns and dries out. Grilling gives crispy edges.
Stir the black beans and salsa into the roasted tofu and heat through until everything is combined. The beans raise the protein and fibre.
