Preparation Steps

  1. Parboil the rice

    Rinse the rice, then simmer it in one cup of water over low heat until the water is absorbed and the rice is almost tender, about ten minutes. Parboiling the rice in water first softens it before the milk is added and shortens the cooking time in the milk.

  2. Add the milk

    Add the milk to the softened rice and leave it over low-medium heat with frequent stirring until it comes to a gentle boil. Stir occasionally to prevent the rice sticking to the base and burning — milk catches and burns easily.

  3. Cook until thickened

  5. Perfume and portion

    Turn off the heat and stir in the orange blossom water and rose water. Divide the rice pudding into individual serving cups or bowls while still hot — it sets as it chills. Leave it to cool slightly then place it in the refrigerator.

  6. Chill and serve

Normal when milk chills. Press a sheet of plastic wrap directly onto the surface during chilling to prevent skin forming, or stir before serving.
