Haleeb Mahmoos (Toasted Milk Sweet)
We make haleeb mahmoos the way it is made in the homes of Najd, where powdered milk is toasted over low heat until it turns golden and gives off a warm caramel aroma reminiscent of the smell of home at hospitality time.
We bring it together with cream and sugar in soft layers served alongside Arabic coffee, for it is one of the sweets tied in memory to family gatherings and Ramadan.
Put the powdered milk in a non-stick pan over very low heat and stir it constantly until its color turns golden and a caramel aroma rises from it, because this toasting is the soul of the whole sweet.
Whisk the egg with half the sugar, then fold in the oil and half the cream, and add the toasted milk and baking powder until it becomes a uniform mixture.
Pour half the mixture into a tray and bake it at 180 Celsius for about 20 minutes until it firms up and its edges turn golden.
Mix the remaining cream with the top powdered milk, the cream cheese, and the rest of the sugar, then pour it over the baked layer.
Thin the remaining base mixture with a little milk and pour it over the top, then return it to the oven until the surface browns, then cool it completely before cutting and serving with coffee.
The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.
A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.
* Percent Daily Values are based on a 2,000-calorie diet per FDA food-label reference values — your daily needs may be higher or lower. Values are derived from the recipe's ingredients via the USDA database.
The most common problems when preparing Haleeb Mahmoos (Toasted Milk Sweet), and how to fix them:
Start over with lower heat and constant stirring, as there is no remedy for burnt milk other than redoing it.
Give each layer its full baking time and cool the sweet completely before cutting so the layers hold.
Move the tray to the upper rack in the last minutes of baking until the surface turns golden.
Keep it covered in the refrigerator for up to four days, and serve it cold as it is more delicious.
Freeze it cut into pieces in an airtight container for up to a month, and thaw it in the refrigerator before serving.
| Original Ingredient | Tested Substitute | Ratio | Flavor Difference |
|---|---|---|---|
| oil | melted butter | same weight, 160 g | The flavor becomes a little richer |
| sugar | powdered sugar | same weight, 120 g | The sweetness is comparable and the texture is smoother |
| cream cheese | extra cream | same weight, 120 g | The layer becomes lighter |
| cream | plant-based cream | same weight, 340 g | The texture stays close |
| Ingredient | Half batch | Batch (base) | Double |
|---|---|---|---|
| powdered milk | 75 g | 150 g | 300 g |
| cream | 170 g | 340 g | 680 g |
| sugar | 60 g | 120 g | 240 g |
| vegetable oil | 80 ml | 160 ml | 320 ml |
| egg | 50 g | 100 g | 200 g |
| cream cheese | 60 g | 120 g | 240 g |
Keep the heat very low while toasting the milk and stir without stopping, because powdered milk burns in seconds and turns bitter if we look away.
