Persian Saffron Ice Cream (Bastani)
A traditional Iranian ice cream known as bastani sonnati, combining the golden color of saffron and the aroma of rose water and cardamom with the crunch of pistachios, it is one of Iran's most famous cold desserts.
We make it here in a way that needs no ice cream machine, as whipped cream with condensed milk gives a smooth, creamy texture.
Grind the saffron threads, then sprinkle them over ice cubes in a small bowl and let them dissolve at room temperature, because the slow dissolving draws out the saffron's full color and flavor.
Mix the sweetened condensed milk with the dissolved saffron, rose water, and ground cardamom until uniform, then set it aside.
Whip the cold cream with an electric mixer until stiff peaks form, because soft peaks don't trap enough air for the creamy texture.
Add the condensed milk mixture to the whipped cream and fold it gently with a rubber spatula from the bottom up, so we don't lose the air.
Add the chopped pistachios and fold them in gently so they distribute through the mixture.
Pour the mixture into a cake mold, garnish it with pistachios, cover it tightly, then freeze it for at least eight hours until it sets.
Take it out two to four minutes before serving so it softens a little, then scoop it into balls.
