Date Coffee Tahini Shake
We offer this shake as an alternative to a milkshake, sweetened with dates alone and no added sugar; the tahini gives it a creamy texture and the coffee a depth that recalls coffee ice cream.
We see it as fitting for our suhoor in Ramadan because dates and tahini provide lasting energy, and both are staples of our Gulf table.
If the dates are dry, soak them in hot water for five minutes then drain them, as soft dates dissolve in the blender and leave no pieces.
Put the ice, tahini, dates, vanilla, salt, and coffee in the blender, as this order helps the mixture turn smoothly.
Blend on high speed until the mixture becomes smooth, frothy, and creamy, and this foam is the sign of sufficient blending.
Pour it into the cups and serve it right away before the ice melts, so it stays cold and thick in texture.
The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.
A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.
* Percent Daily Values are based on a 2,000-calorie diet per FDA food-label reference values — your daily needs may be higher or lower. Values are derived from the recipe's ingredients via the USDA database.
The most common problems when preparing Date Coffee Tahini Shake, and how to fix them:
We soak the dates in hot water for five minutes and drain them before blending, as soaking softens them so they dissolve completely.
We add 50 g of ice or reduce the coffee, as more ice thickens the shake and makes it colder.
We serve it as soon as it is blended because the ice melts quickly and thins the texture, so it is not suited for storing.
We blend the ingredients except the ice and keep them chilled for up to a day, then add the ice and blend at serving.

|---|---|---|---|
| tahini | peanut butter | 45 g | A creamy alternative with a nutty flavor for those who dislike sesame (shifts the allergen to peanuts) |

| Medjool dates | Sukkari dates | 60 g | A softer, sweeter Gulf date that dissolves easily and deepens the sweetness |
| ice | frozen banana | 220 g | Gives a thicker texture and natural sweetness without dilution from melting ice |
