GIA low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Personal Avocado Egg Toast — a complete single-serve breakfast with just 3 ingredients and seasoning, ready in 8 minutes.
A classic personal breakfast — a complete meal (carbs from bread, fat from avocado, protein from the egg).
8 minutes, no extra dishes. Perfect for a busy morning before work or university.
Toast the bread slice in the toaster on medium-high for 2 minutes.
In a small bowl, mash half the avocado with a fork along with a pinch of salt and pepper. Leave some small chunks (do not mash completely smooth).
In a small pan with a little oil, fry the egg over medium heat for 2-3 minutes (71°C — white fully set, yolk perfectly runny, per USDA FSIS).
Spread the mashed avocado evenly over the toasted bread.
Carefully transfer the fried egg on top of the avocado. If the yolk is runny, press gently so it runs.
Scatter a pinch of dried chilli flakes (if you like heat), a pinch of salt, and a crack of black pepper. Serve immediately.
The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.
A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.
* Percent Daily Values are based on a 2,000-calorie diet per FDA food-label reference values — your daily needs may be higher or lower. Values are derived from the recipe's ingredients via the USDA database.
The most common problems when preparing Personal Avocado Egg Toast, and how to fix them:
Not ripe. Buy 3 days before you need it and ripen in a paper bag with an apple.
Overcooked. 2-3 minutes is enough for a fried egg.
Avocado too wet. Spread it in a thin layer, not a thick mound.
You skipped the runny yolk. Press the yolk so it flows over the bread.
Best eaten right after making. Avocado oxidises after about an hour.
Bread goes soft, avocado oxidises.
Toast several bread slices in one batch. The rest takes only 3 minutes in the morning.

Use wholemeal toast rather than white — higher fibre keeps you full longer. Check avocado ripeness with a thumb press: softens slightly = ripe; firm = not ripe; very soft = overripe.
