Cheese Sambousek in the Air Fryer
Sambousek is a constant guest on Ramadan tables, and we present it in the air fryer so it stays crisp and golden with just a tiny oil spray instead of submersion.
Mix the akkawi and mozzarella cheeses with the parsley, dried mint, and black pepper in a bowl until combined. If the akkawi is very salty, soak it briefly then squeeze it.
Take a sambousek wrapper, place a teaspoon of filling at its end, then fold it into successive triangles to the end and seal the last edge with a little water so it sticks and the filling does not leak.
Brush both sides of each triangle with a light spray of oil so it takes on a golden, crisp color without submersion.
Preheat the air fryer to 180°C for three minutes before adding the sambousek.
Arrange the triangles in a single layer in the basket without crowding so air circulates, and cook them at 180°C for 10 minutes, shaking the basket at the fifth minute so they brown evenly.
Take them out when they turn golden and crisp on both sides and the cheese is melted inside. They are far lighter in oil than sambousek submerged in oil.
