Hot wheat or millet bread is mashed with the local banana then drizzled with local ghee and honey, and in Jazan it is eaten alternating with salted fish in one of the strangest and most venerable pairings of Saudi cuisine.

Preparation Steps

  1. Bake the wheat discs

    Knead the flour with the salt and water into a soft dough and rest it for a third of an hour, then roll it into discs and bake them on a hot saj griddle until cooked and speckled. In the original Jazani way they are baked from millet in the meefa oven.

  2. Mash the hot bread with the banana, the marsa

    In a deep bowl crumble the hot discs and add the ripe local banana, then mash them together with a pestle or with your fingertips in a continuous motion until they unite into a soft golden dough. From this mashing (marsa) the dish takes its name, as the Saudi Press Agency documented its story.

  3. Drizzle with country ghee and mash a final time

    Pour half the melted country ghee over the warm dough and keep mashing until it absorbs it, glistens, and softens.

  4. Dome it and fill the well

    Shape it into a dome in the serving dish, hollow out its top, and fill the well with the rest of the ghee and the honey. The familiar southern form for a sweet morning or holiday dish.

  5. Serve, Jazan-style, alongside the salty

    It is eaten warm, a bite dipped into the well, and during the Jazan holiday it is served with salted fish, alternating a bite of sweet and a bite of salty: a sweet and a salty, a documented, wonderful, delicious tradition.
