Almond milk with dates and cardamom
In Gulf homes, almonds and dates have always appeared together on the table of hospitality: a plate of dates beside a handful of almonds, served with coffee and tea. This drink brings the two together in one cup.
Soaked almonds are blended with water and strained to give a light plant-based milk, then sweetened with a whole date instead of sugar, with a pinch of cardamom added, the same spice that perfumes Arabic coffee, giving the drink a familiar aroma. The result is a cup free of dairy and added sugar, drunk cold in the midday heat or warm on winter nights, and it works as a light suhoor in Ramadan when a drink that hydrates without heaviness is preferred.
Cover the almonds with cold water two fingers above them, cover the bowl, and leave it on the shelf for 8 to 12 hours (or overnight). Sign of success: the almonds swell and soften slightly when pressed. Soaking softens the nut so it gives a smoother texture and more milk when blended.

Pour the mixture through a nut milk bag or a piece of cheesecloth over a bowl, and squeeze with your hands until the pulp is dry. The bitterness usually comes from the almond skin or from keeping the soaking water. Discard the soaking water, rinse the almonds well, and remove the brown skin before blending.
Reduce the blending water to three cups instead of four, or add a little more almonds. Blend longer to extract more of the flesh before straining.
The date did not soften enough. Soak it in warm water for ten extra minutes until it crumbles, then blend it well before straining.
