Toasted bread with country ghee
Toasted bread with country ghee is one of the original Hijazi suhoor breakfasts.
Families in Jeddah and Makkah prepare it as a quick appetite-opener. The ghee gives the toasted bread a rich flavor and depth, and the Sedri honey adds a luxurious Gulf sweetness.
Cut the bread into squares or leave it round.
In a pan, heat the country ghee over low heat until it softens and takes on a light amber color.
Place the bread in the pan and toss for one minute on each side until it browns and soaks up the ghee.
Add the thyme and a light pinch of salt, and toss.
Pour the Sedri honey over the top right away and serve hot.
The glycemic index (GI) measures how quickly a food raises blood sugar, while the glycemic load (GL) measures how much a full serving raises it. Together they give the complete picture.
A low value (≤55) means a gradual rise in blood sugar — the most suitable range for diabetes and insulin resistance.
Glycemic load reflects the impact of the full serving. To lower it: take half a serving, or pair the recipe with a source of protein and fiber.
* Percent Daily Values are based on a 2,000-calorie diet per FDA food-label reference values — your daily needs may be higher or lower. Values are derived from the recipe's ingredients via the USDA database.
The most common problems when preparing Toasted Bread with Country Ghee, and how to fix them:
Lower the heat and reduce the toasting time. The bread burns quickly.
The ghee was overheated. Take it off the heat and let it cool.
Warm it for 5 seconds before pouring.
Add a lemon and fresh thyme.
One day in a container. Reheat in a pan.
The ghee separates.
